Do you eat breakfast?
I do. But that's because I love it. It's my favorite meal. And usually, I am hungry an hour after waking up.
I know many people aren't like me though.
In the mornings I don't eat anything and just survive off of my coffee… I find myself around 10/10:30 RAVENOUS and cranky and trying to decide if I should just wait until lunch to eat and then all of a sudden I'm stuffing my face with the nearest salty snack, like a whole sleeve of club crackers, because I will literally pass out and/or rip somebodies head off if I don't have something! I feel fatigued, I start to get a headache and just SPIRAL from there. It doesn't feel good.
Does this happen to anyone else 🙋♀️?
The days I feel my best are when I have breakfast - it helps to balance my blood sugars from the start, feel satiated, and sets me off on the right foot to then eat balanced snacks and meals the rest of the day!
This morning I made my weekly breakfast bake. It's a fairly easy meal to prep for the week, sits well in the fridge, and tastes amazing every day. It's never the same, yet always satisfying. It's a great way to use up any whole grains, protein, and veggies on your counter or in your fridge that are wilting or getting soft. It is balanced with protein, carbs, veggies, and healthy fats. It's a winner!!
Here's what I do:
I love tater tots. Like, LOVE them. So they are the base of my bake!
Bake about 30 tots until they are starting to brown. Put them in the bottom of your pie plate (or whatever dish you choose to use) and smoosh 'em down with the back of your spatula to make a crust base.
Chop up veggies, garlic, onion, greens, protein - whatever is in the fridge/on the counter that is about to spoil if you don't take action soon. Dump them into your dish and spread evenly around on top of the tots.
Scramble up 10-12 eggs (depends on how many veggie/protein goodies you put in your dish). Pour on top of your veggie/protein goodies.
I like to give my pie plate a bit of a shimmy back, forth, and around to let the eggs and goodies settle in nicely.
Bake at 350* until the middle isn't jiggly. I don't time this... I wait until I smell something tasty and go check to see if it's baked through. It's how I roll!
Slice into servings and your breakfast is ready for the week!
Seriously, knowing you are supporting your system to feel better right from the get-go in the morning will set you up for continued success throughout the day.
